Strawberry Cake

Quick and Easy moist vanilla based cake loaded with fresh strawberries. This strawberry cake is a must when strawberries are in season. The cake is made with yogurt and oil which keeps the cake moist even after few days. I love this recipe for several reason: its not overly sweet, requires simple ingredients and all done in one mixing bowl only requiring a whisk !

Ingredients

  • 2½ cup plain flour
  • ½ cup strawberries, chopped
  • 1 cup strawberries, halved
  • 1 cup plain yoghurt
  • ½ cup vegetable oil
  • 1 cup caster sugar
  • 2 eggs
  • 2 tsp baking powder
  • 1 tsp vanilla essence
  • Icing sugar, for dusting

        Method

        1. Preheat oven to 160°C fan forced. Prepare a round cake tin with baking paper.
        2. Add sugar, eggs, yoghurt and oil in a mixing bowl and mix well with a whisk.
        3. Add flour and baking powder and mix until just combined.
        4. Pour half the mixture in baking pan and scatter diced strawberries. Pour the remaining batter and arrange halved strawberries faced down.
        5. Bake for 40 minutes or until a skewer comes out clean.
        6. Allow it to cool before turning it on the wire rack. Once completely cooled down dust it with icing sugar
