Quick and Easy moist vanilla based cake loaded with fresh strawberries. This strawberry cake is a must when strawberries are in season. The cake is made with yogurt and oil which keeps the cake moist even after few days. I love this recipe for several reason: its not overly sweet, requires simple ingredients and all done in one mixing bowl only requiring a whisk !

Ingredients
- 2½ cup plain flour
- ½ cup strawberries, chopped
- 1 cup strawberries, halved
- 1 cup plain yoghurt
- ½ cup vegetable oil
- 1 cup caster sugar
- 2 eggs
- 2 tsp baking powder
- 1 tsp vanilla essence
- Icing sugar, for dusting
Method
- Preheat oven to 160°C fan forced. Prepare a round cake tin with baking paper.
- Add sugar, eggs, yoghurt and oil in a mixing bowl and mix well with a whisk.
- Add flour and baking powder and mix until just combined.
- Pour half the mixture in baking pan and scatter diced strawberries. Pour the remaining batter and arrange halved strawberries faced down.
- Bake for 40 minutes or until a skewer comes out clean.
- Allow it to cool before turning it on the wire rack. Once completely cooled down dust it with icing sugar
