Plum and Walnut Crumble Slice

Everybody loves a crumble. They’re the perfect dish for using top-notch in-season produce, and this version takes the classic dessert and puts it in slice form, so you can enjoy it anywhere, anytime.

Preparation time: 30 minutes
Cooking time: 55 minutes

Ingredients

  • 90g walnuts, chopped
  • 2/3 cup (160g) brown sugar
  • 1/2 cup (75g) plain flour
  • 180g unsalted butter, softened
  • 150g caster sugar
  • 1 egg
  • 170g self-raising flour
  • 1/4 cup (90g) golden syrup
  • 5 plums, seeds removed, cut into 5mm slices

        Method:

        1. Preheat oven to 180°C. Line the base and sides of a 20cm x 30cm lamington pan with baking paper.
        2. To make the crumble, combine walnut, brown sugar, plain flour and a pinch of salt flakes in a large bowl. Add 80g butter and, using your fingertips, rub the mixture together to create chunky crumbs. Set aside.
        3. Melt remaining 100g butter and place in a large bowl with the caster sugar, egg, self-raising flour and golden syrup. Mix until smooth then spread mixture into prepared pan. Layer sliced plums over the top and scatter over crumble mixture.
        4. Bake for 50-55 minutes until the centre is set and crumble is golden. Cool in pan before cutting into slices to serve.
