The Ploughman Hot Cross Bun
Drew Dawson, Chef and Owner of The Cool Room Cafe just down the road from The Good Grocer East Fremantle, puts a savoury spin on the iconic Rottnest Bakery hot cross buns. Skeptics, trust us, the combination works, and it’s the perfect Easter brunch.

Ingredients
- 6 Traditional Rottnest Bakery Hot Cross Buns
- 6 Tbsp Crunch Preserves Picalilli Relish
- 400g sliced ham off the bone
- 6 slices havarti cheese
Ham Glaze
- 2 Tbsp black treacle
- 1/2 orange, juiced
- Pinch of cinnamon
Method:
- For the ham, warm together treacle, orange juice and cinnamon. Brush over ham and warm ham through.
- Toast the hot cross buns and cut in half. Butter each half.
- Layer the buns with picalilli, ham and slice of havarti cheese.
HOT TIP: At the East Fremantle 1st Birthday, Drew actually whipped the picalilli with butter – absolute game changer!
