Peach, tomato and mozzarella celebration salad

This side salad from The Three Blue Duck’s Darren Robertson is good enough to be the main attraction on any table this Christmas. 

Ingredients

  • 3 ripe heirloom tomatoes, sliced
  • 300g mixed small heirloom tomatoes, halved
  • 2 ripe yellow peaches, stones removed, cut into wedges
  • 4 long green shallots, thinly sliced
  • 2 buffalo mozzarella, torn
  • 1 cup basil leaves

Dressing 

  • 100ml extra virgin olive oil
  • 1/4 cup (60ml) red wine vinegar
  • 1/2 tsp runny honey
  • 1 small garlic clove, crushed

 

                Method

                1. For the dressing, whisk all the ingredients together in a small bowl. Season.
                2. Place tomatoes in a bowl and season with salt flakes. Arrange the tomato, peach and shallot on a large serving platter with mozzarella and basil. Season, drizzle with dressing and serve
