BackPeach, tomato and mozzarella celebration salad
This side salad from The Three Blue Duck’s Darren Robertson is good enough to be the main attraction on any table this Christmas.
Ingredients
- 3 ripe heirloom tomatoes, sliced
- 300g mixed small heirloom tomatoes, halved
- 2 ripe yellow peaches, stones removed, cut into wedges
- 4 long green shallots, thinly sliced
- 2 buffalo mozzarella, torn
- 1 cup basil leaves
Dressing
- 100ml extra virgin olive oil
- 1/4 cup (60ml) red wine vinegar
- 1/2 tsp runny honey
- 1 small garlic clove, crushed
Method
- For the dressing, whisk all the ingredients together in a small bowl. Season.
- Place tomatoes in a bowl and season with salt flakes. Arrange the tomato, peach and shallot on a large serving platter with mozzarella and basil. Season, drizzle with dressing and serve
