Grilled Halloumi and Strawberry Salad
BackGrilled Halloumi and Strawberry Salad
Sweet, juicy strawberries and salty halloumi are piled on top of mixed greens and drizzled with a tangy balsamic vinaigrette in this beautiful grilled halloumi and strawberry salad.

Serves 2
Ingredients:
- 1 punnet Heavenly Strawberries, washed and sliced into 5mm rounds (discard the green top)
- 3Tbsp olive oil
- 2 Tbsp sticky balsamic
- 1/4 cup baby mint leaves picked (or chopped mint)
- 1 Tbsp chives, finely sliced
- 1 Tbsp parsley, finely chopped
- freshly ground black pepper
- 300g ish halloumi, sliced into 3 pieces
Method
- Toss all strawberry salad ingredients together gently in a bowl to combine.
- Heat a frypan with a little oil over medium heat and add the halloumi, grilling for around 1 minute each side, until warm and caramelised.
- Place the haloumi on a plate and spoon over the strawberry salad.
- Garnish with extra mint and serve.
