Grilled Halloumi and Strawberry Salad

Sweet, juicy strawberries and salty halloumi are piled on top of mixed greens and drizzled with a tangy balsamic vinaigrette in this beautiful grilled halloumi and strawberry salad.

Serves 2

Ingredients:

  • 1 punnet Heavenly Strawberries, washed and sliced into 5mm rounds (discard the green top)
  • 3Tbsp olive oil
  • 2 Tbsp sticky balsamic
  • 1/4 cup baby mint leaves picked (or chopped mint)
  • 1 Tbsp chives, finely sliced
  • 1 Tbsp parsley, finely chopped
  • freshly ground black pepper
  • 300g ish halloumi, sliced into 3 pieces

      Method

      1. Toss all strawberry salad ingredients together gently in a bowl to combine.
      2. Heat a frypan with a little oil over medium heat and add the halloumi, grilling for around 1 minute each side, until warm and caramelised.
      3. Place the haloumi on a plate and spoon over the strawberry salad.
      4. Garnish with extra mint and serve.
