Serves 4

Time 20 minutes

Ingredients

  • 4 large eggs
  • ⅔ cup milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • Sea salt
  • Butter or oil for the pan
  • 8 thick slices of bread (thick-sliced brioche works great)
  • The Good Grocer Collection maple syrup and/or powdered sugar for serving

Method:

  1. In a shallow dish, whisk together the eggs, milk, vanilla, cinnamon, and a pinch of salt.
  2. Heat a nonstick skillet or griddle over medium heat and brush with butter.
  3. Dip each slice of bread into the egg mixture, turning to coat both sides. Place into the skillet and cook for 2 minutes per side, or until golden brown. Reduce the heat to low as needed to cook thoroughly without burning. Work in batches if necessary, brushing the skillet with more butter between batches.
  4. Serve with maple syrup and/or a dusting of powdered sugar.
  5. Finish by adding any of Dad’s favourite toppings! Try fresh berries, sliced banana, a dollop of organic Greek yoghurt, a spoonful of crunchy peanut butter, or a sprinkle of toasted nuts- all available in-store at The Good Grocer.
