Ingredients

Nachos:

  • 1 tbsp The Good Grocer Collection Extra Virgin Olive Oil
  • 1 large brown onion, chopped
  • 500g ground beef
  • 2 cloves garlic, finely chopped
  • 1 tbsp taco seasoning
  • Sea salt, to taste
  • 1 x 400g can refried beans
  • 1/4 cup water
  • 1  bag The Good Grocer Collection Corn Chips, divided
  • 2 cups shredded cheddar cheese, divided
  • 2 cups shredded Monterey Jack cheese, divided
  • 1 x 400g can black beans, drained, divided
  • 1/2 cup pickled jalapeños, divided

Toppings:

  • 1 large tomato, finely chopped
  • 1 avocado, finely chopped
  • 60ml fresh coriander leaves (optional)
  • 60ml thinly sliced spring onions
  • Sour cream and hot sauce, to drizzle

 

    Method:

    1. Preheat oven to 220°C. In a large frying pan over medium heat, heat the olive oil. Add the chopped onion and cook, stirring occasionally, until softened, about 7 minutes. Add the minced beef and cook, stirring with a wooden spoon, until no longer pink, about 6 minutes. Drain any excess fat.
    2. Spread half of the tortilla chips on a baking tray lined with foil. Top with half of the beef and bean mixture, half of the cheese, half of the black beans, and half of the pickled jalapeños. Repeat to create a second layer.
    3. Bake the nachos for about 15 minutes, or until the cheese is melted.
    4. To serve, top the nachos with the chopped tomato, avocado, coriander (if using), and spring onions. Drizzle with sour cream and hot sauce, then serve immediately.
