Apple and Raspberry Lunch Box Slice

The base of this deliciously versatile slice allows you to utilise any fruit you have on hand – frozen berries and stone fruit work too. Naturally sweet and filling, it also freezes well, making it the perfect nourishing lunch box slice.

Ingredients

  • 3 red apples, cored
  • 1 overripe banana
  • 2 free-range eggs
  • 100g melted butter/ghee/coconut oil
  • 1 cup almond meal* (can be replaced by flour for allergies)
  • 1 cup buckwheat flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • pinch of sea salt
  • 2 cups frozen raspberries/blueberries/stone fruit

    Method:

    1. Preheat oven to 180° and line a 30cm x 20cm baking tray with baking paper.
    2. Place apple in a food processor and process until well chopped but not puréed.
    3. Add banana, eggs, cinnamon, vanilla and melted butter, and process until everything is well combined.
    4. Add almond meal, buckwheat flour, baking powder and salt, and gently process until everything is just combined, try to not overmix it.
    5. Pour mixture into prepared baking pan and spread out evenly. Add raspberries or fruit of choice to the top and press down into the mixture.
    6. Cook for 40 minutes or until golden brown.
    7. Allow to cool in the tray before slicing, to avoid crumbling.
