Sweet Potato Jack-o-Lanterns

  • 2 medium sweet potatoes
  • The Good Grocer Collection Olive oil
  • Sea salt


  1. Preheat oven to 200 degrees, and line a baking tray with baking paper.
  2. Peel the sweet potatoes with a vegetable peeler.
  3. Slice the sweet potatoes so they are about ½ cm thick.
  4. Using a sharp paring knife, carefully cut out jack-lantern faces on each sweet potato.
  5. Place the jack-o-lanterns onto the baking tray, and drizzle with olive oil.
  6. Use your hands to spread oil evenly on the tops and bottoms, sprinkle with salt and roast for 25-30 minutes, flipping halfway through. Serve with your favourite sauces.
