This Prosciutto, Burrata and Grilled Peach Salad is perfect for Summer parties. Sweet peaches and salty prosciutto pair perfectly with the creamy burrata. A quick hit on the BBQ makes juicy Summer peaches gloriously caramelised & subtly smoky.

Serves: 2-4
Ingredients
- 2 large peaches, firm but ripe
- 2 balls burrata
- 1 tbsp The Good Grocer Collection Olive Oil
- 100g Prosciutto, roughly torn
- Handful of fresh basil, roughly torn
- 1 tbsp white balsamic vinegar
- Flaky sea salt and ground black pepper
- Preheat your BBQ to 250 degrees C.
- Cut peaches into wedges/slices, cut them thicker than you’d eat raw, we recommend quarters or sixths.
- Place the peaches directly on the BBQ grates. Grill 3-4 minutes per side, or until nicely charred & slightly softened.
- Arrange the grilled peaches on a large plate or serving platter. Gently tear the prosciutto & burrata over the peaches. Finish with the basil, a quick drizzle of olive oil & white balsamic, & a good pinch of flaky sea salt & ground black pepper. Serve immediately. Enjoy!
