Chicken and Qukes Rice Paper Rolls

Ingredients

  • 250g Qukes baby cucumbers
  • 2 cups shredded cooked chicken
  • 1/4 cup mayonnaise
  • 100g dried rice vermicelli noodles
  • 12 rice paper wrappers
  • 1 avocado
  • 1/4 small iceberg lettuce, shredded
  • 1 cup fresh mint leaves
  • Sweet chilli sauce, to serve

      Method

      1. Thinly slice the Qukes lengthways (a mandolin is the best way to do this). Combine the chicken and mayonnaise.
      2. Prepare the noodles following the packet directions, refresh under cold water, drain well and return to bowl. Cut into shorter lengths using kitchen scissors.
      3. Working with one rice paper sheet at a time, submerge it in a shallow dish of luke-warm water for 3 seconds (it should still be firm). Place on a board and pat dry with a paper towel to remove excess water. Place 4-5 Qukes slices down the centre of the rice paper sheet
      4. Top with chicken, noodles, avocado, lettuce, and mint. Fold in the sides and roll-up firmly from the end closest to you, enclosing the filling. Repeat to make 12 rice paper rolls. Place into a lunch box with sweet chilli sauce and lunch box extras.
