Burst Cherry Tomato Pasta
This easy pasta dish is perfect for a weeknight meal. Simple ingredients come together quickly for a flavourful sauce made with tomatoes and their juices. To customise it, you can add red chilli flakes for heat or toasted breadcrumbs for crunch. Fresh basil and parmesan cheese finish the dish for a delicious and satisfying dinner.

Ingredients
- 450g long pasta like spaghetti or fettuccini
- 1 tsp. salt
- ½ cup The Good Grocer Collection olive oil
- 2 large garlic cloves, finely chopped
- 3 punnets cherry tomatoes
- Black pepper,
- Parmesan cheese, to serve
Method
- Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente; drain pasta, reserving pasta water, and transfer to a large bowl.
- Meanwhile, warm extra-virgin olive oil in a large frypan over medium-high heat.
- Add garlic, cooking for 1-2 minutes until fragrant, then add cherry tomatoes, freshly ground black pepper, a pinch of sugar, and salt.
- Cook pasta sauce, stirring occasionally, until tomatoes burst and release their juices, 6–8 minutes.
- Toss cooked pasta with cherry tomato sauce; if needed, thin sauce with a little reserved pasta water.
- Toss in 1 cup coarsely chopped fresh basil and top with freshly grated Parmesan.
